You could do it because the capacitor will slowly charge to full power and
then, when it discharges, it will release the same amount of current as a
cap running off an AC supply.  There is one very serious drawback --- it
will probably take the cap 30-45 seconds to recharge so you only get one
"shot" every 30-45 seconds.

Since a TC's output actually "grows" as the 120-500 pps discharge fires into
the previously ionized air, they require an efficient source of current for
optimum operation and the ability to recharge the cap fast enough to fire
hundreds of times per second.  A Wimshurst generator will not provide
anywhere near the current required for efficient TC operation unless you are
satisfied with only one very short spark every minute.
