I usually use a small gear motor to turn the secodnar;y form.  I mount
the gearmotor to side of workbench, and use a standing frame to hold
other coil end.  I use a sewing machine type foot pedal to control the
motor speed for a smooth start.  I put the wire spool into a wooden
support with metal bar though middle so spool can spin.  But the
professional way is to set the spool on edge and let the wire twirl
off the end of spool.  I just guide the wire by hand, except on very
small coils for which i use a jig that guides the wire and spaces it
automatically.  I have this set up for #34 wire.  More work to build such
a winding jig though.

You can use a handcrank at end of coil form instead of a motor, if
you can't find a motor.
