Hi Bryan,
              have you seen a microwave xfmr lately? There is a dirty great 
arc weld running down each side to hold the lams together - you'd have to 
mill away most of the core to be able to rewind it.  The winding window is 
also a touch small for any HV stuff because, particullarlly using mylar 
interlayer insulation, you'll barely get any windings on it before you're 
touching the outside of the window and arcing to the core.  You really want a 
core designed for much lower power density, either an old core or a very 
large core way below its VA rating.
