Nice results.  I think the MOT's are OK for that.

It may cause self breaking, I don't know for sure.  My rotaries
sometimes fail to start unless the variac is set at zero.  I suspect
that folks who have seen too much self-breaking may have used
too much capacitance (more than a 5V resonant rise).  Just a 
guess.
