One can use a Variac as a variable inductor, with a motor run cap, to vary the phase of a sync motor.  John Freau pioneered this and is described on his web site: http://members.aol.com/futuret/page3.html

But I would first ask - are you really using a 2 HP motor?  With what size power supply on your coil?  2HP to essentially turn a switch off and on seems a gross waste of power.
