Jim,

Converting a 3-phase transformer to 1 phase duty, the best you can do is:
Chuck core in vice, spit in hands, start reciting your favorite mantra, 
and hacksaw away for the next 20 minutes or so, that it is going to take 
to eliminate that pesky middle leg.
Result: a core with wonderfully amble room for nice high voltage winding.
