The mains-variac-isolation-load configuration is the 
preferred method, especially if you are planning on 
physical contact with the variac (ie. adjustments) 
during operation.

Proper division of circuit grounds and good shielding 
techniques should obviate the need for such draconian 
measures as an iso xfmr, IMO.
Besides, isn't that the NST's job?
