Dan,

If I were you, with an 8" secondary, I would use like
2 or 3 15/60's in parallel.  You could easily pump
several KVA through a secondary of that size.  I would
go for the higher current primary rather than the
higher voltage...but that's just me, some others would
no doubt disagree...and that's probably a good thing.
