Hi, Ted in NZ
I've used a Variac BUT I'm currently experimenting with a split arrangement
with 1/2 the system on mains direct and the other 1/2 on the variac.
I get the system tuned and operating correctly first with a variac on both
halves of the MOT stack then can alter to above system.
I bring on 1/2 direct on mains first then wind up the variac. The variac
side is ALWAYS connected even if wound to zero volts as I need a Short on
the mains side of the unenergised 1/2 of the stack.

This method has only been bench tested to dummy load at this time but will
soon try on Tesla which is currently being upgraded to bigger MMC and 400bps
rotary
