Clive,
     A few suggestions, wire your MOTs in series/anti-parallel
configuration, this means have the two MOT cores wired together with a
ground (like a center tap grounded NST) and wire the primaries in
parallel.  If you cannot draw any arcs between the two HV outs, then
reverse polarity of only one of MOT primaries.  1/4 cu tubing is fine.  
The advantage of this is that the MOTs are working at their ordinary
voltage ratings, and oil is not necessary (they also run quieter this way,
as their noise cancels each other out, kind of cool).  18AWG wire is kind
of big, unless you plan on building a big secondary, like 12-in diameter,
(I assume you plan on using 18 AWG "magnet wire" correct?).  Three segment
spark gap should be fine if designed properly, I cannot help you there,
never had good luck with multi-segment gaps, I went strait to a rotary
gap.  You cannot use MO caps for a tank cap, they will be terribly
inefficient, and I've read about them blowing up in TC use (you cannot
believe everything you read however, perhaps someone on the list can
verify or discredit this).  Your best bet would be a proper MMC with CD
caps, or if you are really strapped for funds (like me), you could build a
cap the old fashioned way, check the archives if you are interested.  I
