[TCML] Calculation of Capacitance

Hey all,
is there a formula for calculating the capacitance of a home-made capacitor based on the area of plate overlap and perhaps plate separation? Also does the dielectric affect capacitance as well or does is only affect breakdown voltage and energy storage efficiency? I am thinking of creating a capacitor using a large 1 m by 2 m piece of thick plexi-glass and 2 large copper plates using borrowed university resources. Is plexi-glass a good dielectric medium? Also is there a rough value for the capacitance of a beer bottle cap and what is the general breakdown voltage range for beer bottle caps?
