Actually going from neutral to +120 on one and neutral to -120 on the other is far safer than what most of us do with 240 in a single or parallel variacs. Both legs will be zero at a variac setting of zero, which isn't the case for 240 in a single variac.

Using 240 on a single variac means the wiper goes from -120 to +120.

I have the same variac stack, but it's too small for my coil.

I'm glad to hear some others have used this approach before with no problems. =) 
This dual variac is significantly lighter than the 3 gang 50 amp beast I would be using otherwise. Less back breaking for sure. 

The exterior house plug is actually 4 wire, super convenient as I can ground all my cases for added safety. 
I will probably add some form of metering to the system as well.
