Seems a bit odd. Most likely the increase in capacitance is due to the
higher water level i.e. increased surface.
It might hold charge a fraction longer. I've used a mixture of salt water
and vinegar once, held charge up to half a second. But 2 weeks later it had
0 capacitance left, it appeared the mixture was reactive and it dissolved
the copper electrodes completely.
