I just checked my lab notes and my 120vac PT saturates at 150vac (25% above
rating). As Jim said the 110kv BIL insulation will handle it but the core
will saturate way before insulation becomes an issue. 

I have the manual for my PT but it's at home. If I remember correctly it's
only rated for 10% overvoltage (taking into account it's intended purpose
as an accurate instrumentation/potential transformer).

The insulation is probably good for substantially more (check the BIL rating
on the nameplate).  What won't necessarily be good for more voltage is the
core.  It might saturate.  You can probably run 10-20% overvoltage without
any problem (i.e. 48 volts over the nominal 240, or 288V), but 20% is
getting pretty near the edge. You can experimentally check this by running
it with no secondary load and looking at the current in the primary as you
raise the voltage. If you plot the current as a function of voltage, you'll
get a straight line up until the core starts to saturate, at which point,
the current will start to climb faster.

If you've got two identical transformers, paralleling is no problem.  If
they aren't identical, then you'll need some sort of "equalizing"
transformer between the outputs to account for the different voltages or
