Hi Marc, 

Some transformers used for coiling are not current limited such as pole pigs
and potential transformers. Therefore, external current limiting is required
and a variac is just one common option. Another common option is the use of
welders and recently winding your own current limiting transformer. The variacs
are also useful in a variety of other areas as a means of varying input
voltage. It's not a "must" - just a handy device in coiling.
